Meal Numero Uno

Rise and shine good looking people. It’s time to talk about your first meal of the day. (Taco Bell has Fourth Meal, here we have Meal Numero Uno.) Once all of you peeps hit the paleo-sphere, I would say about 57% of you have a major dilemma with what to do once your toasty toes, groggy eyes, and bed-headed selves walk across the threshold of your lovely kitchens. With all of your newfound knowledge, you know that a drive-thru McGriddle or bowl of Honey Bunches of Oats (personal fave from a previous life) is no longer a viable option for looking good naked, living to be old and ripe like Betty White, or performing like the stud or studette you are at the box.  So, what’s a girl to do after her shooter of whey protein? (Easy, boys…girl sounds better.)

 

*Before I inundate you with a plethora of breakfast ideas, I have to put a disclaimer out that I will never, ever, get sick of eggs & meat (especially BACON) for breakfast. I also have zero issue with pulling out last night’s leftovers and heating them up …sometimes I’ll even throw a dippy egg on top for good luck. Breakfast is nothing more than your first fuel-up of the day. Do you put regular in you SUV in the morning and premium in the evening? I didn’t think so (and your spouse prays not!).Throw some protein, fat, and good carbs (i.e. veggies) on a plate and call it a day…er, morning. Typical breakfast at mi casa-which the non-cavemen now enjoy-greens topped with dippy eggs, salsa, and guacamole. Often enjoyed with a chunk of additional protein.  Chase it with some berries if you’d like. Enjoy black coffee and some delicious H2O.  Meal numero uno complete. *

 

Now that I got that out of my system, I may actually be trying some of these recipes that I unearthed for you fine friends. Delicious coconut crepes with berries (omit the sugar if you are participating in the challenge-you won’t miss it) and sweet potato latkes have been tried and confirmed delicious by many a CFR member. I highly recommend a breakfast burrito-use lettuce wraps and fill with egg, salsa, avocado slices or guac, and enjoy. Play with it and make it your own – super easy! Quiche (cupcakes anyone?) and frittata’s are delicious and easy to throw together for a week’s worth of breakfast on Sunday night. I bet one of your favorite meals as a cavekid was breakfast for dinner. Do me a solid and try dinner for breakfast. You know you want to.

  2. One of my new favorite breakfasts is similar to some ideas Mal posted above. My favorite 10 minute weeknight meal is bun-less and cheese-less cheesesteaks. I just buy the frozen 100% beef steaks from BJ’s (i know, not grass-fed, but thats not always possible) toss some onion and green pepper into the pan and serve atop or alongside a veggie. Anyway, cook up a little extra meat, use that greased up pan to fry an egg..or 2…or 3 and voila! Breakfast for the morning. An easy rendition of steak and eggs. Repurposing dinner is my favorite breakfast. When I started at CFR, Beau said “think of breakfast as a time of day.” just something to think about…

  4. We’re big fans of the coconut pancakes (primal blueprint) without the honey and the almond meal pancakes (everyday paleo). I’ll eat anything for breakfast, Melanie won’t….so we normally need a variety of food available.

    I like dippy eggs over a sliced avocado roped off with salsa….
    But like Tiff and Mal, I will also eat leftover pot roast, left over meatloaf, left over bacon (wait…that never happens!)…. With eggs.

  5. Had the coconut flour crepes for brunch this morning minus the stevia and whipped cream. I filled them with thawed frozen strawberries and topped them with the juice that forms as the strawberries thaw. This is going to be a new staple in our household!
